Cranberry Nut Granola

Instructions
Preheat oven to 140 C/ 280 ℉/ 120 ℃ fan.
Combine
225 g jumbo oats
,
45 g mixed nuts
and
45 g coconut
in a bowl.
Heat
3 tbsp vegetable oil
,
80 ml maple syrup
,
1 tbsp fresh lemon juice
, zest of
1 orange
, and
1/2 tsp cinnamon
in a medium saucepan until warm.
Mix in the oat mixture and stir until evenly coated.
Spread granola on a baking tray and bake for 40 minutes, stirring every 10 minutes, until golden.
Remove from tray, cool and stir in
100 g dried cranberries
and
2 tbsp pumpkin seeds
. This granola will keep for 2 weeks in an airtight container.
