Friday Night Dinner for One
This recipe is one of my all-time favourite quick meals. I only ever make it for myself because, unfortunately, the rest of my family loathe artichoke hearts. They’re missing out, so when I treat myself to a jar of artichokes they are mine, all mine!
Pop the kettle on and while that’s heating up prepare the veg. By the time the kettle is boiled the vegetables are ready and away you go – a nutritious and flavour-packed lunch or dinner recipe ready in under 10 minutes.
This dish benefits with plenty of freshly ground black pepper over the top, I think. If you are like me you might want to just keep the pepper grinder next to you and keep grinding more as you work through the dish. There’s just something about the sweet, juicy tomatoes, the tartness of the feta and the flavour of the artichokes which work incredibly well together, and the black pepper takes it to a whole new level.

Ingredients for Tagliatelle with Cherry Tomatoes, Artichokes, Feta & Rocket
- fresh tagliatelle – look out for this in the chilled section of your supermarket, or make your own
- sea salt, to cook the pasta in
- cherry tomatoes on the vine – I like piccolo tomatoes
- artichoke hearts in oil – you can find these in the canned vegetable section usually near the olives
- feta cheese
- olive oil – I use Pomora
- a handful of fresh rocket leaves
- some fresh basil leaves, to garnish
- plenty of freshly ground black pepper
How to Make this Easy Pasta Recipe for One – Step-by-step Instructions
- Cook your pasta in boiling salted water for 3-4 minutes.
- Heat olive oil (or use oil from the jar of artichokes) in a saute pan and saute the halved cherry tomatoes (cut side down) and sliced artichokes for 3 minutes.
- Arrange a handful of fresh rocket leaves in your serving bowl and top with the drained pasta.
- Pour over the contents of your saute pan.
- Sprinkle with feta cheese.
- Garnish with fresh basil and season to taste.

This easy tagliatelle recipe with cherry tomatoes, artichokes, feta and rocket takes only ten minutes to make, making for a perfect Friday night dinner for one.
What is tagliatelle?
Tagliatelle is long, flat ribbons of pasta between 6.5 and 10 mm wide. Italian in origin, it is suitable as a base for a wide variety of sauces, from meat sauce to carbonara. It is usually found in coiled nests, either fresh or dried.

How to cook tagliatelle
Bring a large pan of salted water to the boil. For five nests (approximately 125 grams) you’ll need 1250 ml of water and a good tablespoonful of salt. When it’s at a rolling boil, add the pasta and cook for 3 minutes at a gentle boil, if fresh, and 8-10 if dried.
Can I use other types of pasta?
Absolutely! This recipe also works well with linguine and spaghetti. You can also use dried tagliatelle, but I prefer the flavour (and speed) of fresh pasta.

You can replace the fresh pasta with dried gluten-free tagliatelle or make your own fresh pasta with gluten-free farina.

Tagliatelle with Cherry Tomatoes, Artichokes, Feta and Rocket
Ingredients
- 100 grams fresh tagliatelle
- 1 tbsp olive oil (or use oil from the artichokes jar)
- 130 grams cherry tomatoes halved
- 90 grams artichokes in oil sliced
- 30 grams feta cheese
- 20 grams rocket leaves
- 1 handful fresh basil leaves
- freshly ground black pepper to taste

Instructions
- Bring a pan of salted water to the boil and cook the pasta for 3-4 minutes.
- Meanwhile, heat olive oil (or use oil from the jar of artichokes) in a saute pan. Saute the halved cherry tomatoes (cut side down) and sliced artichokes for 3 minutes.
- Drain the cooked pasta well.
- Add the rocket to the bottom of a serving bowl and top with the drained pasta.
- Spoon over the contents of the saute pan and sprinkle with feta cheese.
- Garnish with fresh basil leaves and season well to taste.

I have to travel 20 miles to my nearest supermarket to do my main shopping, but daily staples such as milk and bread, as well as our weekly locally grown veg box, get picked up at our local village shop just a 1/2 mile away. The milk is locally produced too, and the bread is made at a bakery just a few miles away. The furthest I’ve ever gone for ingredients was to Aberdeen (200-mile overnight ferry) to pick up branded ingredients I couldn’t source in Shetland for a photo shoot.
